Decided in Oct. '98 that a well-rounded home chemist should also have experience with grape products. As the first batch of Clawhammer Chianti approaches its birthday, I note the following:
- One must be thorough in eliminating the carbon dioxide prior to bottling. A carbonated Chianti (no matter how slightly) is not a great wine.
- One year in the bottle is insufficient for this wine.
- In spite of all this, I doubt that there will be a bottle that reaches its second birthday. It ain't that bad . . .
